Gwen's Baked Beans
- 2 lbs. Dry Beans
- 1/2 c. Brown Sugar, packed
- 1/2 lb. Salt Pork
- 1/2 tsp. Dry Mustard
- 1 Medium Onion
- 1/2 tsp. Ginger
- 2 c. Maple Syrup (dark)
- Salt & Pepper to taste
Sort and wash dry beans.
Soak beans overnight. Bring to a boil. Lower heat to simmer. Cook until you blow on the beans and the skin peals away (about one hour). Drain the beans but save the water. Place the onion in the bottom of a bean pot. Pour the beans over the onion. Slice salt pork nearly to the rind in half inch squares. Place the pork, rind side up, near the top of the beans. Mix all other ingredients. Add some bean juice, stir together and pour over the beans. Add juice until 1 inch above the beans. Add water as needed. Bake in a 250 degree oven for 6 to 8 hours.
LEE'S FAVORITE PANCAKES
- 2 c. Flour
- 1 tsp. Baking Soda
- 1/4 c. Sugar
- 4 Eggs separated
- 1/4 tsp. Salt
- 1/4 c. Oil
- 1 c. Buttermilk
Beat egg whites.
Combine egg yolks, oil and buttermilk. Sift together dry ingredients. Add egg yolk mixture to dry ingredients. Mix well. Add 1 to 2 cups blueberries or apples (pealed and cut in small pieces). Fold in whites. Fry at 325 degrees in electric frying pan.
Serve with Delicious MAINE MAPLE SYRUP.
MAPLE OATMEAL COOKIES
- 6 Tablespoons butter
- 1 Cup Pure Maine Maple Syrup
- 1 Teaspoon grated lemon peel
- 1 Egg
- 1 Cup minus 2 Tbs all-purpose flour
- 1/4 Teaspoon salt
- 1/2 Teaspoon baking soda
- pinch allspice
- 1/2 cup rolled oats (not instant)
Sift together the flour, salt, soda and allspice. Cream the butter, then beat in the syrup, lemon rind and egg.
Stir in the dry ingredients, then the oatmeal. Drop by teaspoons on a lightly greased baking sheet. Bake in a preheated 350 degree oven for about 10 minutes. Cool on a wire rack.
Maple Glazed Carrots
- 10 Medium carrots
- 3 Tablespoons butter
- 1 Cup Pure Maine Maple Syrup
- 1/2 Teaspoon ginger
Slice carrots.
Cook until tender. Add Pure Maine Maple Syrup, ginger and butter. Simmer carrots in maple syrup mixture until glazed.
